The History of the Manor
The beginnings
Manoir du Bouyssou, located in Cintegabelle, is a historic residence whose origins date back to the late 15th century, a period marked by the pastel boom and the agricultural renaissance. At that time, it belonged to the Tissandier family, a wealthy middle-class family from Toulouse. By 1560, Jehan Tissandier, a prosperous merchant, owned substantial landholdings, making him one of the city's wealthiest landowners. The estate included a borde, a manor house, a dovecote, a bakehouse, a mill and a pastel store.

In 1650, the estate was sold to François Goty. The manor house, built of dark brick, is embellished with towers: a square tower to the west and a round tower to the east. The facade opens onto a courtyard accessed through a large door in a high wall, watched over by a corner turret. Particularly noteworthy is the dovecote, a highly original building resembling a dungeon. Built some fifty metres from the manor house, it is a massive round tower crowned by a brick dome, surrounded by five rounded acroteria in the shape of tiny turrets. The interior of the dovecote is covered with numerous bolts arranged in regular rows.
